The Gallery Grill is the best kept lunch secret in Toronto. Nestled in the upper cloisters (i.e. ‘the gallery’) overlooking the great hall at Hart House, the University of Toronto restaurant serves a discreet crowd of academics, Queen’s Park mandarins and in-the-know gastronomes. At the helm since its opening in 1995 has been Suzanne Baby. A decade and a half tenure in any fine dining kitchen is a feat in and of itself. But her longevity is not at all surprising, since she has executed on her vision of a seasonal, locally sourced cuisine from the beginning. Chef Baby sat down with me recently to collaborate on this interview.
