The enthusiastic Gaétan Dugas explains his family’s history in oyster farming

A couple of weeks back Good Food Revolution had the pleasure of visiting Oyster Farmer Gaétan Dugas in Caraquet, New Brunswick. Gaétan’s family have been harvesting oysters on the Bay of Chaleur in the northeastern reaches of New Brunswick’s Acadian Peninsula for generations, and his oysters are now in demand the world over. We shared a few bottles of wine with Gaétan over a local Lobster dinner and then took him out onto the beach for a little interview…
