Koval Four Grain Whiskey at Vintages

Le Sommelier presents a Chicago made artisan spirit at the LCBO.

KOVAL is back again this month (their Bourbon and Oat Whiskey were released earlier this year), this time with their single barrel Four Grain Whiskey. This incredibly refined, rich and smooth whiskey was runner up to Jim Murray’s Whisky Bible “US Micro Whisky of the Year!”

The Four Grain is distilled from a mash bill of oat, malted barley, rye, and wheat. It is aged in heavily charred new oak barrels from Minnesota, and bottled single barrel at 94 proof (47% alc./vol.). The four grains define its depth with a banana nose, creamy palate, and spicy finish. Only the “heart cut” of the distillate, no “heads” or “tails.” Grains sourced from a local organic farmer collective in the Midwest.

KOVAL’s products are certified organic and certified kosher, handcrafted, small batch, “single barrel” unfiltered expressions, aged in 30 gallon charred barrels. This insures that the distillate, made up solely of the heart cut, is able to develope its flavor with the purest grain notes and luscious flavor. The term “single barrel” refers to the fact that the bottles come from specific barrels and are numbered accordingly. All KOVAL spirits can be traced back to their barrel, and in fact, the specific shipments of raw materials can be also be traced to their organic farmers. Some serious integrity of production has lead to heaps of press for all of their products.
