Now, we have always been huge fans of Christopher Sealy and Giuseppe Anile’s west-Dundas West spot (at Gladstone), but we were recently most happy to see that they have expanded their menu from the usual salumi and cheese, giving control of the Midfield kitchen to veteran Toronto Chef Carlos Hernandez.

Last seen at Queen West’s now shuttered Inigo, and before that at Kensington Market’s Torito Tapas Bar, Hernandez brings a wealth of experience to the Midfield kitchen. We caught up with him on one of the warmest days of the year to find out his plans for Midfield’s summer menu.
