Just this afternoon Chef René Redzepi of Copenhagen’s famed Noma restaurant was in town to launch his book Noma: A Time and Place in Nordic Cuisine. He sat down with Alison Fryer of Toronto’s Cookbook Store (our newest Good Food Fighter!) to discuss his personal cooking philosophy and how he executes this in his restaurant.
