Patricia Noonan suggests cocktails for mums…

Mother’s Day is about flowers and gifts, especially treating mothers to a brunch or dinner out. As we all know, this year a lot of the options are, shall we say, restricted. Yes, go for the flowers and yes, cook up a fabulous breakfast, brunch or dinner for that special mother. Remember that there are some pretty delicious and easy celebratory cocktails to enjoy, and with spring in mind, here are a few to consider.

For brunch, there’s the classic Bellini, created in Venice, Italy using the famed white peaches pureed with a top up of Prosecco. There’s another way to make it if you don’t have any lovely ripe peaches at hand.

Ciroc Peach Bellini

1 oz Ciroc Peach (flavoured vodka)
4 oz Prosecco (or more to taste)

Pour Ciroc into flute glass and top with bubbly.

Anything floral or with bubbles works for me. I love Chambord and Cassis so you can make that special mother either a Kir Royale or a Chambord Royale. As with the previous recipe, just use an ounce of your favourite liqueur added to a flute glass and top off with your favourite bubbles, either NV champagne or crémant de bourgogne and add either a blackberry or a raspberry to garnish.

If orange juice is the preferred morning beverage, well then your other go-to is a Mimosa and that’s easily turned into a pitcher beverage with equal parts OJ and bubbly. For a low alcohol version, I’ve used very dry pear cider instead of sparkling wine and it works out quite nicely.

Happy Mothers Day 2020!
