Noble Estates features the wines of David Paxton and family.

Established in 1979, Paxton is a family owned McLaren Vale wine company. Founder and owner, David Paxton is one of Australia’s most highly respected viticulturalists – a reputation built on managing and growing wine grapes of exceptional quality for over 30 years.

The Paxton family have nurtured their own vineyards in McLaren Vale, South Australia, for three decades. Internationally recognized as one of Australia’s leading wine regions, McLaren Vale is renowned for the production of super premium quality wines – particularly red wines.

In 2000, the family released their first wine under the PAXTON label: the 1998 Paxton Shiraz. Today, under the direction and guidance of winemaker Richard Freebairn – Paxton produces a range of estate grown wines under the family label.

The Paxton wine range is an approachable collection of wines that showcase McLaren Vale’s fruit quality (through Paxton’s superior vineyard sites), natural diversity and varietal expression. In the winery, minimal winemaking intervention ensures the integrity of the fruit from vineyard to bottle. Their aim is to showcase the intensity of fruit grown biodynamically, and to champion the cause for wider adoption of sustainable farming methods.

Biodynamics is the most advanced form of organic farming. It uses natural preparations and composts to bring the soil and the vine into balance, resulting in exceptionally pure and expressive fruit. Healthy vines make better wines. Paxton vineyards are spread across a diverse number of sites and soil types, which are managed without compromise from planting to harvest. David Paxton continues to strive to minimize inputs and manages the Paxton vineyards biodynamically – a system of farming without the use of synthetic fertilizers and pesticides with a focus on promoting healthy, living soils through the use of natural compost preparations.

2013 Jones Block Shiraz $39.35 (Case of 6) – 96 points James Halliday 
This is McLaren Vale Shiraz at its finest. From the acclaimed ‘Jones Block’, this wine is well regarded for its generous, yet elegant style. A small parcel was selected from the century old vines for complex fruit flavours and seamless structure. Grapes are hand harvested; wine is aged for 20 months in fine grained French and American oak. A rich, savoury and spicy blend, this wine has a fleshy middle palate and great length. Very drinkable now, but it can age another 10-30 years.

2014 Quandong Shiraz – $34.40 (Case of 6) – 91 points Wine Spectator 
Quandong Farm was the first vineyard to be converted to Biodynamic practices. The grapes were handpicked at optimum flavour. 20% of the harvest was used as whole bunch, while the remainder was delicately de-stemmed over the top of the whole bunch. The ferment was 100% wild/ natural yeast. The small batch ferments were carefully pumped over for 14 days to extract colour, flavour and tannin structure. The juice was pressed into new and mature French oak barriques, where they were aged for 12 months prior to bottling. This wine can be cellared up to 10 years.

2015 The Guesser Red – $17.85 (Case of 12) – 90 points Halliday Wine Companion 
Selected batches of Shiraz, Grenache, Cabernet Sauvignon and Tempranillo were fermented and aged separately in small French and American oak barriques. They were blended to achieve a fruit-filled wine, expressing a nose of Cabernet Sauvignon and Tempranillo, mid palate of Shiraz and finish of silky Grenache. It has a red berry and cinnamon aroma with a rich and luscious finish.
