June 4th : Fishmongering 101 Class

June 18th : Wild West Coast Fish

The wild salmon, halibut and groundfish fisheries are OPEN for the season! And there might even be spot prawns if we are lucky:) It’s time to celebrate the WILD from British Columbia while the fisheries are just opening and there is loads of beautiful fish to choose from! We will cure, smoke and cook up everything we can get our hands on from our small boat fishers on the coast including cold smoked wild salmon lox, smoked rare spring salmon, marinated slow baked halibut, brined and roast lingcod. And hopefully spot prawns…

June 25th : Southern Italian Summer Fish with Deborah

We are fortunate to have one of our very favourite chefs teaching with us at Hooked, Deborah Reid. An incredibly accomplished chef and instructor, Deb is a true lover of Southern (and Northern and Eastern…) Italian cuisine. Join Deborah for this perfect summertime class as she instructs you on great fish, Southern Italian style. Dishes from Sicily and Calabria, fish and shellfish marinated, grilled and roasted, along with glorious fresh sides. Molto benissimo!

July 16th : Japanese Snacks + Sushi

Here is a nation whose diet is centred around great fish, and whose culture is focused on great eating! We will spend time learning raw preparations, including sashimi, sushi and handrolls. We will also enjoy the snacky side of Japanese eats with okonomiyaki, gyoza and tempura. SO GOOD!!!
