The cold weather has arrived in Toronto and we cannot stop thinking of the perfect wines to pair with delicious winter cuisine.

In 2013 Frédéric Brouca rooted himself in Faugères almost as deep as the old vines he started to farm. His holistic understanding of viticulture implies stimulating an alive environment and promoting the growth of native flowers and grass in the vineyards. He is strictly working applying organic practices: all his plots are certified.

In the winery, the philosophy Frederic follows is minimalistic: all wines are unfined and unfiltered.

In his modest winery in the village of Laurens, Frédéric is creating a new vision for Faugères wines; fresh, vibrant and made without artifice. Nothing revolutionary, simply returning to our grandparent’s ideology of farming and winemaking to craft ‘Vins Vivants’.

2018 Roussanne Seulle $21.95
Brouca’s first white wine made from organically farmed Roussanne cultivated on schist soils.
“Medium gold in color, highly floral, candied quince and beeswax on the nose. Light to medium bodied but lush texture. Has a lovely fresh bitterness and apricot skin acidity. Lightly honeyed palate with a playful and airy finish. So pretty!!”, Ian Thresher dixit.

2017 Clos Sauveplane $34.95
Brouca’s single plot wine that he only elaborates in exceptional vintages. Clos Sauveplane is a walled isolated vineyard in the eastern extreme of Faugères. Here, vines of Mourvèdre and Syrah have been growing organically for more than 30 years. The grapes are co-fermented in a foûdre and aged in a big wooden vat for a year. Heady and delicious, with an intense nose that takes you to a place where dark fruits grow wildly surrounded by liquorices, eucalyptus and sage.

2018 De Facto Rosé $22.95
Rosé de Schist. Direct whole clusters press of very old Grenache and Mourvèdre vines, grown in an isolated vineyard, in a hidden and cold valley in Faugères. Aged on its fine lees during six months. Deeply-hued, full-flavored, amazing acidity.

A Classic in our portfolio: bright, vibrant and textured blend of old Grenache, Syrah and Carignan. During 10 months, 90% ages in stainless steel and 10% in neutral French oak barrels.
