Yesterday morning I had breakfast winetasting in my basement office with the delightful Estel-la Oncins, a Sommelier who works with La Vinyeta, a small sustainable winery in northwest Catalonia. After the tasting we sat down for an interview about her relatively young winery’s history, philosophy, and treasure trove of ancient vines.
