If one were to swear by the old adage of location, location, location, perhaps one would question a young restaurateur’s decision to plant his flag on a Dundas West property two blocks west of Dufferin. While nobody ever suggested that opening and sustaining a Toronto restaurant was an easy task, despite the seemingly forever-burgeoning nature of this southern border of Brockton Village, Cafe – Bar – Pasta remains a unknown entity to most of this city’s more discerning diners.
Citing awareness of his business as one of his greatest obstacles, Cafe – Bar – Pasta’s Thomas Christopher Bielecki is on a determined mission to have his establishment and its Chef Jay Scaife-run kitchen garner the recognition he feels it deserves. This week Thomas and his son Cameron sat down with Good Food Revolution to discuss the challenges of being the Owner/Operator of an independent restaurant in today’s Toronto.
