If you haven’t noticed peach season is in full force in Ontario. I had my first peach spotting at Fiesta Farms exactly 21 days ago and I was kind of shocked to see such beautiful peaches so early. I guess we have global waring to thank for that. If only the young corn was as delicious this recipe would be for a peach and corn salsa instead. I trust that when the time is right you’ll add some grilled niblets to this simple salsa. If you’re not a fan of cilantro then use some fresh mint which is equally as delicious. Enjoy!

INGREDIENTS:
4 peaches – halved
1 cooking onion – halved
jalapeno – halved (remove the seeds if you don’t like it too spicy)
cilantro – small handful
lime – halved
olive oil
salt
pepper

INSTRUCTIONS:
On a hot grill (or grill pan) place peaches, onion, jalapeno & lime face down, cook for 2-5 mins. Chop everything making sure to finely chop the jalapeno & cilantro. Add a drizzle of olive oil, the juice from the lime and finish with a pinch of salt & pepper.
