The other week we spoke with André Heuston Mack of Mouton Noir Wines, a charming fellow who had worked for some time in the position of Sommelier for Chef Thomas Keller. This week sees the turn of Jimmy Hayes, Estate Director of Mayacamas Vineyards, and another Thomas Keller Sommelier Team alumnus.
