2012 Tawse Spark Riesling
2012 marks the introductory release of our Spark Riesling, crafted from hand-harvested grapes from Limestone Ridge, our newest estate vineyard. Fermented in the bottle, this aromatic sparkling has a pretty nose of mandarin, white flower and a hint of minerality. On the palate, refreshing notes of green apple, lemon curd and lime zest pair with lively acidity and a pleasant mousse to make this a wine perfect for any occasion!
2011 Tawse Spark Blend
Our new Spark Blend is crafted in the traditional method from a blend of Chardonnay (65%), Pinot Gris (22%) and Pinot Noir (13%) grapes from select Niagara Peninsula vineyards. Aged 12 month on its lees, this complex sparkling has a delicate nose of baked apple, coconut and a hint of marzipan. On the palate, enticing notes of white peach and cantaloupe pair with lively acidity. A perfect wine to celebrate the holidays.
2010 Tawse Spark Chardonnay
Certified organic and biodynamic, this is the third vintage of sparkling wine produced from the David’s Block estate vineyard. Spark Chardonnay was made entirely from this one kind of grape, harvested early to ensure the perfect balance between flavour and acidity. Crafted in the traditional method, this lively wine spent 24 months on its lees for exceptional flavor development. Citrus zest, ripe apple and freshly baked bread notes dominate the nose. On the palate, the crisp acidity and soft mousse tickle the senses and amplify vibrant notes of lemon zest, MacIntosh apple and a hint of roasted cashews.
