Alessandro Porcelli, founder and chief of Cook It Raw, is very excited for his organization’s next big event: BBQ Perspectives this October in Charleston, South Carolina. Led by famed Low Country chef Group of Seven Chefs are set to join. To make the video below, I spoke with Porcelli via Skype from his office in Copenhagen about Cook It Raw and this event, which is the first to be open to the general public.
