Woodman Wines & Spirits welcomes Dingle Irish Whiskey to the Ontario market.

We’ve written in our past newsletters about the surge in popularity of Irish whiskey. That Irish whiskey’s triple distillation results in a spirit that is smooth and silky on the palate. We’ve remarked on how the “new breed” of younger distillers have broken the market stranglehold of big corporations with bold new expressions based – somewhat ironically – on the style of Irish whiskies of the past.  And we’ve shared that Irish whiskey is poised to soon overtake scotch whisky in some key markets.

It’s an exciting time for Ireland’s distillers, and we are proud to introduce the latest small-batch Irish distiller in our portfolio.

Founded in 2012, Dingle Distillery has a lot that makes it special. It’s named after the small town of Dingle, which abuts the frigid North Atlantic on Ireland’s wild southwestern edge. The coastal climate and humidity are perfect for maturing whiskey. A triple distilled single malt, it is aged in a combination of sherry and bourbon casks and bottled at 46.3% ABV. It’s non-chill filtered and no additional colouring is added (not even the industry standard caramel). The water comes from the distillery’s own pure water well some 73 meters deep.

All this is impressive, but the thing that makes Dingle’s whiskey unique is that it truly is hand made. The whiskey is “hand-cut,” meaning that the heads, tails, and heart of the spirit are separated by eye, nose, and hand. “From the time the grist and that same pure water meeting in the mash tun, adjusting the temperature of the wort, making the spirit cuts to filling the casks, everything is done by hand. All the senses work in harmony…”

With its captivating amber/gold colour, Dingle Single Malt Irish Whiskey offers up an elegant, complex nose suggesting cocoa powder, marzipan, malted grain, hard toffee, and a trace of baked apple. The palate is rich, warm, and exceptionally well-balanced, with nuances of toasted nuts, nougat, caramel, fruitcake, sultana, and a hint of clove-infused orange that drift into an extended, mildly spicy finish.
