Just this afternoon Chef René Redzepi of Copenhagen’s famed Noma restaurant was in town to launch his book Noma: A Time and Place in Nordic Cuisine. He sat down with Alison Fryer of Toronto’s Cookbook Store (our newest Good Food Fighter!) to discuss his personal cooking philosophy and how he executes this in his restaurant. For those of you who did not have the chance to attend here is a little snippet of what you missed:
Noma: A Time and Place in Nordic Cuisine is available from The Cookbook Store.
